8 Quick and Easy Chicken Breast Dinner Recipes

Chicken breast has a reputation for being boring, and I would argue that is our fault, not the chicken’s.

It is lean, so it dries out the moment your attention wanders.

Mine wanders constantly.

Everything below either cooks fast enough to stay juicy or sits in a sauce while it cooks.

1. Fajita Stuffed Chicken Breast

Breasts cut open and filled with bell pepper, onion and cheddar, seasoned with chili powder, paprika, cumin, cayenne and lime.

Forty minutes, serves four.

Cut a pocket, not a full slice, and leave about half an inch of uncut edge on three sides.

Toothpicks through the opening stop the filling escaping.

It looks like far more effort than it is, which makes it my pick when someone is coming over.

2. Bruschetta Chicken

Chicken with Italian seasoning topped with chopped tomato, red onion, basil, garlic and balsamic.

Twenty minutes, serves four.

Make the tomato topping first and leave it to sit while the chicken cooks.

Ten minutes with salt on it draws the juice out and the whole thing tastes more like itself.

3. Baked BBQ Chicken Breasts

A dry rub of garlic powder, onion powder, chili powder, paprika and brown sugar under a layer of barbecue sauce, baked.

Twenty-five minutes, serves four.

The rub goes on first and the sauce only in the last ten minutes, or the sugar in it burns before the chicken is done.

4. Easy Parmesan Crusted Chicken

Chicken cutlets in a crust of Parmesan and breadcrumbs, pan-fried until crisp.

Five minutes of prep and about fifteen in the pan, and the recipe stretches to eight servings.

Buy cutlets, or slice breasts in half horizontally yourself.

Full-thickness breasts throw the timing off completely and the crust burns while the middle catches up.

5. Honey Garlic Chicken Breast

Chicken in a sticky glaze of honey, soy sauce, garlic, lemon, paprika, butter and white wine, finished with green onion.

Twenty-five minutes, serves four.

Add the honey late, once the chicken is nearly cooked.

Honey goes from caramelized to burnt very quickly.

6. Easy Baked Cajun Chicken Breasts

Cajun seasoning and brown sugar with garlic and butter, baked.

Twenty-five minutes, serves four.

Cajun blends vary enormously in salt, so taste yours before you season the chicken as well.

The brown sugar is what browns the surface in the oven.

7. Air Fryer Chicken Breast

Breasts marinated in Dijon, apple cider vinegar, olive oil, garlic powder and Italian seasoning, then air fried.

Twenty-three minutes, serves two.

The acid in the vinegar and mustard is doing real work in a marinade this short.

The air fryer suits chicken breast because the circulating heat browns the outside before the middle dries.

Check it a few minutes early the first time, since air fryers vary a lot.

8. Baked Thin Sliced Chicken Breast

Thin-cut breasts with garlic, oregano, onion, parsley, paprika and avocado oil, straight into the oven.

Seventeen minutes, serves four.

Thin slicing is the whole reason this is fast.

A breast that is an inch thick at one end and a quarter inch at the other cannot cook evenly, whatever you do to it.

Tips for Juicy Chicken Breast

Pound the breasts to an even thickness, or slice thick ones in half horizontally into cutlets.

Salt the chicken at least fifteen minutes before cooking, and longer is better.

Pull it at 165°F and rest it, because the carryover heat finishes the job.

Rest it five minutes under foil before cutting, and you can see the difference on the board.

If you only change one thing, buy a thermometer, since every dry chicken breast is a guess that went long.

Notes on Prep and Storage

A simple brine of salt and water for twenty minutes makes a noticeable difference and costs nothing.

Cooked chicken breast lasts three or four days refrigerated and freezes for three months.

Store it sliced and sitting in its sauce where there is one, so it stays moist overnight.

Leftover plain chicken goes straight into salads, wraps and bowls, so cooking two extra breasts is rarely wasted.

Reheat it gently and briefly, covered, with a spoonful of liquid.
