8 Quick and Easy Chicken Pita Dinner Recipes

Some nights I want a proper dinner and absolutely no plates to wash.

Pita is my answer to that, and I’m slightly embarrassed by how often I reach for it.

Warm bread, something hot off the pan, a sauce, and whatever salad is in the fridge.

It eats like a real meal and leaves almost nothing behind.

1. Sheet Pan Chicken Kebab Dinner

Ground chicken kebabs with parsley, garlic, onion and chili flakes, roasted on a sheet pan and served with pita and a chopped salad.

Thirty minutes, serves six, which is the best ratio of effort to people fed here.

Wet your hands before shaping the kebabs.

Dry hands and sticky ground chicken mean half the mixture stays on your fingers.

Everything roasts on one tray, so there is no grill and nothing to wash but the pan.

2. Greek Salad Pita Pockets with Grilled Chicken

Chicken breast cutlets grilled with lemon, garlic and dried oregano, packed into pita halves with cucumber, red grape tomatoes and fresh mint.

Twenty-five minutes, four servings.

Cutlets are why this is quick, since whole breasts would double the time.

Mint alongside the usual oregano is a small change and the one I would not skip.

3. Buffalo Chicken Pita Pizza

A Greek flatbread pita used as the crust, topped with cooked chicken in buffalo sauce, mozzarella, blue cheese crumbles and red onion.

Fifteen minutes, written for one, so it scales by simple multiplication.

Toast the pita dry for a minute before anything goes on it.

Straight from the bag it goes soft under the sauce.

4. Grilled Chicken Shawarma Pita Pockets

Spiced grilled chicken breast stuffed into pita with hummus, cabbage, cucumber, tomato, onion, cilantro, lemon and hot sauce.

Twenty-five minutes, feeds four.

The hummus is structural, not decorative.

Spread on the inside of the pocket it waterproofs the bread against everything wet that follows.

5. Grilled Chicken Pita Sandwiches

Grilled chicken with peach, tomato, red onion, sprouts and mint, under a lemony Greek yogurt sauce.

Thirty minutes, serves four.

Peach with chicken sounds like a stretch and it is the reason to make this one.

Use a peach that is ripe but still firm, since a soft one collapses into the yogurt.

6. Easy Sheet Pan Chicken Shawarma

Boneless chicken roasted with allspice, cinnamon, turmeric and cumin, served with romaine, cucumber, tomato, tzatziki and pita.

Forty minutes, serves six.

This is the platter version, where everything goes on the table and people build their own.

Let the chicken rest a few minutes before you slice it.

Cut it straight off the heat and all the juice ends up on the board.

7. Curried Chicken Pitas

Chicken salad with grapes, pecans, green onion and lettuce, dressed with mayonnaise, honey and curry powder.

Fifteen minutes, serves four.

Toast the curry powder in a dry pan for thirty seconds before it goes into the dressing.

Raw curry powder tastes dusty, and that single step is the difference.

8. Maple Chicken Salad Pita Pocket

No cooking at all if the chicken is already done.

Chicken, Cortland apple, cranberry and parsley get bound with Greek yogurt and maple syrup, then spooned into a pocket.

Fifteen minutes, serves one.

Swapping the mayonnaise for Greek yogurt keeps this light, and the apple gives it the crunch the pita cannot.

Tips for Warming Pita Bread

Cold pita cracks when you fold it, and that is almost always why a wrap falls apart.

Thirty seconds per side in a dry pan is enough, and it beats the microwave, which makes the bread tough as it cools.

Wrap warmed pitas in a clean towel to keep them soft while you finish everything else.

Pocket pitas and pocketless flatbreads are different products, so check which one a recipe wants before you shop.

For a wrap, warm bread is not optional.

Notes on Sauces and Leftovers

Tzatziki holds for about four days in a sealed jar and gets better after a few hours.

Cooked chicken keeps the same length of time, and almost all of these are better with the components stored separately.

Assemble pitas as you eat them, never in advance.

The shawarma chicken and the kebabs both freeze for a month, and they reheat fastest in a hot dry pan.
